Vegan & GF Chick-fil-a Nuggets

Living in Atlanta means you're living near the headquarters of Chickfila, and if you're anything like me you probably have friends who are obsessed with the chain. Putting the whole vegan thing aside, I get it. Chickfila has built its brand on great customer service and its greasy food is basically an essential for the hungover college student. I've been to the restaurant quite a bit with friends and outside of coffee, fries, and a lame veggie wrap, there's not any vegan options. This morning I went there with a friend and was inspired to create a vegan and GF version of the not so animal friendly classic.

Ingredients (Makes 20 nuggets):

Nuggets:

  • 1 can chickpeas, drained

  • 1/2 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 1 Tbsp corn crumbs or rice crumbs

  • 1/3 c corn crumbs or rice crumb

  • 1 Tbsp vegan mayo

Sauce:

  • ½ cup vegan mayo

  • 2 tsp dijon mustard

  • 1 tsp lemon juice

  • 2 tbs agave

  • 1 tbs BBQ sauce

Directions:

Preheat oven to 350 degrees F. Whisk together all sauce ingredients and set aside. Place chickpeas in a food processor and blend until mostly smooth. Add in the 1 Tbsp of crumbs, garlic, and nutritional yeast, and blend again. The consistency should be like mashed potatoes. Form the mixture into 20 nuggets. Brush the nuggets lightly with the vegan mayo and then coat in the 1/3 cup of crumbs. Bake for 20 minutes, flip, and bake for an extra 10 minutes. Serve hot with the sauce.
